Armed with a big smile and a mascara, Caroline Fleming waves us into her three-story home in Chelsea, London, where she lives with her three children. But only for a short time, she says and reveals that they will soon give up their life in England and move back to Denmark.

would like to give her children a Danish childhood for what is left of it, for her son Alexander, 15 years old, Josephine, 12, and Nicholas, 8. Even though Caroline hasn't lived in Denmark since she was 18 , Denmark is where she feels at home. Now that she has taken over the running of Valdemars Castle alongside her sister, it feels right to move. Caroline smiles at the thought of giving her children the opportunity to play in the garden, ride their bikes to school and swim in the sea.

Caroline strolls downstairs to the kitchen and returns with a fruit plate, homemade nut bars and wheat milk cappuccino. We sit down on one of the many sofas in the living room, surrounded by a multitude of photos of her children. The children are everything to Caroline. On this April morning the children are all at school and we have Caroline to ourselves for the next few hours.

I was recently in Austria with my godmother, where we stayed overnight at the Vivamayr health clinic. Here I made some interesting discoveries about my body that I shared with my followers on Instagram. I have weighed between 50 and 52 kg since I was 16 years old, but suddenly I gained 8 kg in three months. Caroline Fleminng has her body fat measured at the clinic in Austria. The number should ideally be between -2 and 2, but to everyone's surprise, the display shows -7. Caroline is what is called "skinny fat", which is difficult to understand when looking at the delicate person in the chair in front of us. She sits curled up in the armchair and, with her slender legs, doesn't look at all like a person associated with the word "fat".

"I have always loved cooking and grew up in a house with a father who was phenomenal in the kitchen. My mother couldn't boil an egg or make a slice of toast when she met my father. But my enormous passion for Cooking was really born when my children were very small. I discovered the great joy of being in the kitchen. Every time the children were asleep, I experimented and made preserves and pickles When I started feeding her properly around 5-6 months I bought a Beaba Babycook. It is a machine used for both steaming and mixing foods. I made pureed vegetables and started adding parmesan, herbs or a little coq au Vin from yesterday's dinner so they have a varied taste experience right from the start. I think this helped my kids eat everything today.
